HARVEST APPLE CAKE 
4 c. diced, peeled apples
2 c. sugar
1 egg
1 tsp. vanilla
1 c. salad oil
3 c. flour
2 tsp. baking soda
1 tsp. salt
1/2 tsp. cinnamon
1 tsp. nutmeg
1 c. chopped nuts or 1 c. raisins or 1/2 c. each

Cover apples with sugar; let stand 1 hour. Beat egg, vanilla, and salad oil. Stir apple mixture into egg mixture - do not beat. Sift and combine flour, soda, salt, cinnamon, and nutmeg. Stir into mixture, do not beat. Add nuts and raisins. Pour into greased and floured pan. Bake at 350 degrees for 1 hour or until done.
