DELICIOUS MEAT LOAF | |
1 lb. lean ground meat (part ground turkey also good) 1/4 lb. hot Italian sausage 4 tbsp. bell pepper, finely chopped 1 stalk celery, finely chopped 3 tbsp. onion, chopped 1 lg. egg, beaten 2 cloves garlic, through press 1/2 tsp. sage 1/4 tsp. black pepper 2 tbsp. soy sauce 1 tbsp. brown sugar 2 tbsp. tomato paste 3 tbsp. red wine 3 tbsp. bread crumbs 1 tsp. rosemary Remove casing from sausage. Combine sausage and ground meat. Add bell pepper, celery and onion. Beat the egg and add the garlic, sage, pepper, soy sauce, brown sugar, tomato paste and red wine to the egg. Beat, then add the egg mixture to the meat and blend well. Mix in the bread crumbs. Shape meat into a loaf pan. Sprinkle with the rosemary. Bake at 350 degrees for about 1 hour or until meat tests done. Let sit in pan for 7 to 10 minutes before removing and slicing to serve. |
