COCONUT - CREAM CHEESE POUND
CAKE
 
1 c. butter, softened
1 (8 oz.) pkg. cream cheese, softened
3 c. sugar
6 eggs
3 c. all-purpose flour
1/4 tsp. baking soda
1/2 tsp. salt
1 (6 oz.) pkg. frozen coconut, thawed
1 tsp. vanilla extract
1 tsp. coconut flavoring

Cream butter and cream cheese; gradually add sugar. Add eggs, 1 at a time, beating after each. Combine flour, soda and salt. Add to creamed mixture, mixing just until blended. Stir in remaining ingredients.

Pour batter into a greased and floured 10 inch tube pan. Bake at 325 degrees for 1 1/2 hours or until toothpick inserted in center comes out clean. Cool in pan for about 15 minutes. Remove from pan and let cool on wire rack. A great selection of baking pans can be found at Home Basice. See ad.
