CRUSTLESS QUICHE 
3 lb. pork sausage
1 green pepper, chopped
1 onion, chopped
1/2 lb. sliced mushrooms
1 lb. grated cheddar cheese
1 lb. grated Velveeta cheese
1 dozen eggs
3/4 c. white wine
1 tsp. salt
1 tsp. oregano
1 tsp. parsley
Parmesan cheese

Brown sausage, when almost done, add pepper, onion and mushrooms. Saute and layer in roasting oblong pan. Cover with cheddar and Velveeta cheeses. Beat eggs, wine, salt, oregano, and parsley and pour over cheese layer. Cover with Parmesan cheese. Bake at 350 degrees until slightly browned approximately 45 minutes to 1 hour. Cut into squares. Serve with assorted fruit and sweet rolls. Green pepper may be omitted.
