CREAMED COD FISH | |
1 lb. salt cod fish 4 tbsp. butter 2 tbsp. flour 2 c. milk Dash Tabasco sauce 1 tbsp. minced parsley 2 tbsp. chopped chives 2 hard boiled eggs Fresh cod under cold water. Simmer 10 minutes, water to cover. Drain. Chop in food processor. Melt butter, stir in flour. Cook until smooth. Slowly add milk, stir until smooth and thickened. Add Tabasco sauce, minced parsley, chives and cod. Cook, stir. Add boiled eggs, chopped. Cook 1 minute more. Serve on toast or mashed potatoes. Serves 4. |
