JAMBALAYA 
1/2 c. celery
1 tbsp. vegetable oil
3 tbsp. butter
1/2 c. chopped green pepper
1/2 c. chopped onions
1/3 c. chopped green onions
1 tbsp. basil leaves
1/2 tbsp. thyme leaves
1/2 tsp. garlic salt
1 1/2 lbs. shrimp, deveined
1 c. tomatoes, chopped
1/2 lb. cooked ham, cubed
1/2 lb. smoked Polish sausage
Hot cooked rice

Heat oil and butter in 10" skillet over medium heat. Saute celery, green peppers, onions, green onion, basil, thyme and garlic salt until tender. Add shrimp, ham and sausage. Cook about 7 minutes. Stir in tomatoes. Cook about 10 minutes to blend flavors. Serve over cooked rice.
