JAMBALAYA 
1 tbsp. oil
1 lg. onion, coarsely chopped
1 green pepper, cubed
2 cloves garlic, minced
1 c. uncooked rice
1 (28 oz.) tomatoes, undrained
2 c. fully cooked ham, cubed (chicken or beef can be used)
1 c. chicken broth
2 tbsp. chili powder

Saute onion, pepper and garlic in large skillet until lightly browned. Add rice; cook and stir until browned. Add remaining ingredients. Bring to a boil. Cover and simmer gently for 35 minutes stirring twice.
