APPLE NUT LOAF 
3 c. apples, raw and peeled
3 c. flour
2 eggs
2 c. sugar
1 tsp. baking soda
1 c. oil
1 tsp. salt
2 tsp. vanilla
1 c. pecans, chopped
1 tsp. cinnamon

Dice apples in a bowl; add sugar and let stand 20 minutes. Add remaining ingredients. Mix well. Add nuts. Bake at 350 degrees for 1 hour in greased and floured loaf pan.
