SCANDINAVIAN SALAD 
6 lg. lettuce leaves
1 can shoe string beets, drained
1 sm. onion, sliced in rings
1 sm. jar pickled herring, cut in sm. pieces
6 hard cooked eggs, sliced
Ripe olives
Blue cheese dressing

Arrange lettuce leaves on 6 individual salad plates. Top with shoestring beets. Add onion rings and herring tidbits. Garnish with sliced hard cooked eggs and ripe olives. Drizzle on blue cheese dressing.
