CURRY CHICKEN 
1 chicken, cut up
1 onion, diced
4 cloves garlic, smashed
1 inch cube ginger
3 heaping tsp. curry powder
1/2 tsp. chili
1 med. tomato
1 can (3/4 c.) coconut juice
3 med. potatoes, cut up
Salt and pepper to taste

Pat dry chicken and brown. Set aside. Saute onion, garlic and ginger in a little oil. Add curry powder, chili and tomato. Simmer and add coconut juice chicken and potato. Cook for 1 hour and salt and pepper to taste.
