“HEART HEALTHY CHOCOLATE CHIP COOKIES” IS IN:

HEART HEALTHY CHOCOLATE CHIP
COOKIES
 
2 cups all-purpose flour
1/4 cup flaxseed meal
1 tsp. baking soda
1 tsp. salt
1/2 cup (1 stick) unsalted butter, softened
1/2 cup light olive oil
3/4 cup granulated sugar
3/4 cup packed brown sugar
1 tsp. vanilla extract
2 large egg whites
2 tsp. water
1 large egg yolk
2 cups semisweet or dark chocolate chips
1 cup chopped walnuts

In a large mixing bowl combine flour, flaxseed meal, baking soda and salt. Set aside.

In a separate bowl, combine butter, olive oil and both sugars. Stir until sugar is dissolved. Add vanilla, eggs, water and yolk, and stir until completely incorporated.

Add dry ingredients, 1/2 cup at a time, and stir until all clumps of flour are dissolved. Fold in chocolate chips and walnuts.

Cover and refrigerate cookie dough for at least 1 hour.

BAKING THE COOKIES:

Preheat oven to 350°F.

Drop by tablespoon-full, onto a well-greased or lined baking sheet.

Bake in a preheated 350°F oven for 9 to 11 minutes. Let stand for 2 minutes, then remove to a wire rack to let cool. Serve warm.

Yield; 5 dozen cookies
