SWEET POTATO SAUSAGE PIE 
1 lb. sausage meat
1 1/2 c. apple slices, thinly cut
1/4 c. brown sugar
1 2/3 c. mashed sweet potatoes
1/2 tsp. salt
1 tbsp. butter or substitute
1/2 c. milk
Parsley for garnish (if desired)

Place sausage in glass dish. Arrange apple slices on the sausage. Sprinkle with brown sugar. Mash sweet potatoes. Add salt, butter, and milk; beat until light and fluffy. Place sweet potatoes on apple slices. Bake for 1 hour at 350 degrees. Serve very hot.
