IRISH SAUSAGE PIE 
1 tbsp. butter
1 lb. pork sausages
2 apples, sliced
2 onions, sliced
1 c. stock or water
Mashed potatoes (made with milk & butter)
Melted butter
1 tbsp. flour

Heat butter in skillet, add sausages and cook until browned all over. Remove sausages and keep hot.

To the same pan add apples and onions adding more butter if necessary and brown lightly. Remove apples and onions; keep hot.

Pour off all but 2 tablespoons of fat. Stir in flour (1 tablespoon) and brown it. Stir in stock or water and cook until blended and smooth. Put sausages, apples and onions in baking dish in layers. Pour over this the thickened stock. Cover with a crust of the hot mashed potatoes, having this in peaks. Lightly brush top surface with melted butter. Brown in moderate oven at 350 degrees. Serves 6.
