SCOTCH IRISH SCONES 
3 c. biscuit mix
1/4 c. sugar
2 eggs
1 c. warm mashed potatoes (leftover or fresh)
2 tbsp. butter
1 egg white, slightly beaten (optional)

Mix all ingredients together into a soft dough. Knead about 5 times. Roll to 1/4 inch and cut 2 1/2 squares. Brush with melted butter. Fold over to make a triangle, pressing edges lightly to seal. Place on baking sheet and brush with egg whites. Bake at 400 degrees for 10 minutes or until brown.

BISCUIT MIX:

6 c. flour
3 tbsp. baking powder
1 tbsp. salt
1 c. shortening

Mix all dry ingredients. Cut in shortening until cornmeal consistency. Store with tight lid in glass container at room temperature.
