DELICIOUS RED BEET EGGS 
1 (1 lb.) can (2 c.) beets
1 c. vinegar
3/4 c. granulated sugar
1 tbsp. salt
1 tbsp. mixed pickling spices
6 hard-cooked eggs, peeled
1 medium onion, thinly sliced and separated into rings

Drain beets, reserving liquid. Pour liquid into a glass bowl; simmer sugar, vinegar, salt and spices until sugar dissolves. Mix with beet juice. Add beets, eggs and onion. Cover and chill at least 2 hours, preferably longer.
