SPINACH DIP 
2 (10 oz.) pkg. frozen chopped spinach, thawed and drained
1 (8 oz.) can water chestnuts, drained and finely chopped
1 c. sour cream
1 c. plain yogurt
1 c. finely chopped green onions with tops
1 tsp. salt
1/2 tsp. dried tarragon leaves, crushed
1/2 tsp. dry mustard
1/4 tsp. pepper
1 clove garlic, crushed

Or use 2 cups chopped fresh spinach.

Mix all ingredients. Cover and refrigerate to blend flavors, 1 hour. Serve with crackers or vegetables. This is the only way I get spinach down my kids.
