SPINACH DIP 
1 lg. clove garlic, minced
1 tbsp. olive oil
1 (10 oz.) pkg. frozen spinach, thawed and squeezed well
1/2 c. plain, lowfat yogurt
1/3 c. Parmesan cheese
Salt and pepper

Saute garlic in oil. Mix all ingredients; blend in blender until smooth. Chill. Serve with vegetables that have been steamed until tender but still crisp, then chilled.
