SPICY PEANUT SAUCE--AAA 
1 tbsp. minced scallions
2 tsp. minced garlic
1/2 c. peanut butter
3 tbsp. sesame oil
2 tbsp. soy sauce
2 tsp. minced ginger root
1 1/2 tbsp. sugar
2 tsp. Chinese vinegar
1 tsp. hot chili paste
1/3 c. chicken broth

In a food processor fitted with a steel blade or blender, mince the scallions, garlic, and ginger root. Add the peanut butter, sesame oil, soy sauce, sugar, Chinese vinegar and chili paste. Process until smooth. Add more chicken broth or chili paste as needed. The mixture should be thick but pourable. Serve over noodles, raw vegetables or chicken. If using noodles, mix over noodles while they are still hot. Doubles easily. Makes 2 cups. Quite good...add more chili paste to make it hotter.
