FRESH SPINACH SALAD 
1 pkg. spinach, broken or cut up
1/2 lb. fresh mushrooms, sliced
4 slices bacon, fried crisp & broken up
2-3 boiled eggs, sliced

Mix and dress with following dressing.

DRESSING:

Mix in pint jar: 3 tbsp. wine vinegar 1 tbsp. grated onion 2 tsp. hot Dijon mustard 1 tsp. salt 1 tsp. or more sugar, to taste Pepper as desired

Shake until creamy. Pour just enough to coat salad. Store remaining dressing in refrigerator. Will keep several days and is delicious on almost any vegetable salad.
