STRING BEAN SALAD 
2 lb. fresh string beans (or 2 pkg. frozen string beans, cooked & cooled)
3 tbsp. olive oil
Juice of 1 lemon
1 clove garlic, mashed
Salt & pepper to taste

Wash string beans and break into small pieces. Cook in boiling salted water until crisp-tender. Drain and cool. Mix oil, lemon, garlic, salt and pepper thoroughly. Add to string beans and toss well. Refrigerate.
