10 c. flour 5 eggs, beaten 4 tbsp. olive oil 4-7 c. warm water Olive oil 3 lb. hamburger 4-5 carrots, chopped 1 bunch parsley 4 onions 4-5 garlic cloves 3/4 lb. Parmesan cheese 8 eggs Salt and pepper, to taste Beat together flour, eggs, and olive oil. Knead for 15-20 minutes. Cut into pieces. Cover with wet towel. Roll out with flour. Sprinkle with water. Fold in half. Roll with ravioli roller. Cut with pizza cutter. Flour. Freeze or chill. Fry onion and garlic in olive oil. Put in hamburger. Simmer until hamburger is cooked. Then put in chopped carrots, celery, salt, and pepper. Stir in parsley and chopped spinach. When cooled, put in cheese and eggs. Fill shells. Boil in salted water until ravioli rise to the top. |
