CORN CREOLE 
1 sm. onion, chopped
2 tbsp. butter
2 tbsp. sugar
2 tbsp. flour
1 tsp. salt
1/4 tsp. pepper
1/2 c. grated cheese
1 lb. ground beef
1 tbsp. chili powder
2 cans corn with pepper
1 pkg. corn muffin mix

Saute onion in fat. Add beef and brown. While beef browns mix muffin according to package directions. Add flour and seasonings and corn to drained beef-onion mixture. Pour in baking dish. Spread muffin batter over corn mixture. Sprinkle top with cheese. Bake at 375 degrees for 25-30 minutes or until brown.
