POTATO SOUP 
4 c. peeled, cubed potatoes
1 c. celery, 3/4 inch slices
1 c. coarsely chopped onion
2 c. water
2 tsp. salt
2 c. milk, 2% or skim milk
3 tbsp. Promise butter, melted
1 tbsp. dried parsley flakes
1/8 tsp. pepper
1 c. sliced carrots
1 c. cubed ham pieces, very lean!

Combine potatoes, celery, onion, water and salt in large Dutch oven. Simmer, covered, about 20 minutes or until potatoes are tender. Mash mixture with blender to your favored consistency (smooth or chunky). Blanch carrots separately. Stir in remaining ingredients (including carrots) and return to heat and cook, stirring constantly, until soup is thoroughly heated. Makes 7 cups.
