MICROWAVE CHICKEN BREASTS 
2 chicken breasts
1 tbsp. butter
1 egg
1 tbsp. water
1 (4 oz.) seasoned coating for chicken
Or your favorite crumb coating
8 inch baking dish

Place butter in baking dish, microwave for 20-30 seconds on high or until melted. Set aside.

In a bowl whisk together egg and water. Cut a slit through skin on each breast. Dip chicken down in melted butter with meaty portions toward outside of dish. Microwave at high for 5-6 minutes. Turn chicken over, microwave at high for 5-6 minutes longer or until tender and juices run clear when chicken is pierced with a fork.

Crumb Mix: I use 12 to 16 saltine rolled fine in a gallon size ziplock bag. Add 1 package Good Seasons Italian dry dressing mix, 2 tablespoons canned Italian Parmesan cheese. Mix together, refrigerate leftover mix. If you like more garlic flavor add to taste, also the Parmesan cheese. This recipe serves 2, if you use 4 breasts double cooking time.

Since microwave ovens vary in power, you may need to adjust your cooking time.
