MICROWAVE CHICKEN BREASTS 
2 whole chicken breasts, skinned & boned
2 egg yolks plus 2 tbsp. water
1/2 c. all-purpose flour
Dash of salt
Dash of black pepper
Dash of paprika
1/4 c. bread crumbs
3 tbsp. Parmesan cheese
2 tbsp. butter

CHEESE SAUCE:

2 tbsp. butter
2 tbsp. all-purpose flour
1 c. milk
1 tsp. Worcestershire sauce
1 tbsp. Parmesan cheese
3/4 c. grated cheddar cheese
Green pepper rings for garnish

Flatten chicken breasts lightly. Dip in egg yolks and roll in flour mixture. Place breasts thicker parts at the edges in a microsafe baking dish. Microwave at HIGH power for about 6 minutes, turning chicken breasts over after 4 minutes. Microwave again for 3 to 4 minutes at HIGH power, letting chicken rest after 2 minutes of cooking time.

In the meantime, prepare the sauce: Melt butter in a saucepan. Stir in flour. Slowly add the milk and cook, stirring until sauce thickens. Season with Worcestershire sauce, Parmesan cheese and cheddar cheese. Pour sauce over chicken breasts. Microwave again for 1 to 2 minutes at HIGH power. Serve immediately with green salad and steamed broccoli or string beans. Serves 4.

Since microwave ovens vary in power, you may need to adjust your cooking time.
