MICROWAVE CHICKEN BREASTS | |
2 whole chicken breasts, skinned & boned 2 egg yolks plus 2 tbsp. water 1/2 c. all-purpose flour Dash of salt Dash of black pepper Dash of paprika 1/4 c. bread crumbs 3 tbsp. Parmesan cheese 2 tbsp. butter CHEESE SAUCE: 2 tbsp. butter 2 tbsp. all-purpose flour 1 c. milk 1 tsp. Worcestershire sauce 1 tbsp. Parmesan cheese 3/4 c. grated cheddar cheese Green pepper rings for garnish Flatten chicken breasts lightly. Dip in egg yolks and roll in flour mixture. Place breasts thicker parts at the edges in a microsafe baking dish. Microwave at HIGH power for about 6 minutes, turning chicken breasts over after 4 minutes. Microwave again for 3 to 4 minutes at HIGH power, letting chicken rest after 2 minutes of cooking time. In the meantime, prepare the sauce: Melt butter in a saucepan. Stir in flour. Slowly add the milk and cook, stirring until sauce thickens. Season with Worcestershire sauce, Parmesan cheese and cheddar cheese. Pour sauce over chicken breasts. Microwave again for 1 to 2 minutes at HIGH power. Serve immediately with green salad and steamed broccoli or string beans. Serves 4. |
