FANCY BISCUITS | |
1 1/4 oz. pkg. active dry yeast (or equivalent) 2 tbsp. warm water (110°F) 5 cups all-purpose flour 1 tsp. salt 1 tsp. baking soda 3 tbsp. sugar 1 cup softened butter or vegetable oil 2 cups buttermilk Dissolve yeast in warm water and set aside. In a large bowl, combine flour, salt, soda and sugar. Cut in butter or stir in oil. Make a well in center, and add buttermilk and yeast, incorporating them gradually into dough with a wooden spoon. Batter will be sticky, Refrigerate dough in tightly closed plastic bag or bowl until ready to use. Do not allow dough to rise. Use as needed. Roll out and bake on a greased pan in a 450°F oven for 10 minutes. Variation: Use whole-wheat flour instead of all-purpose. Makes 3 dozen biscuits. |
