CORN FRITTERS | |
1 can cream corn 1/2 c. flour 1/2 c. yellow cornmeal 1 tsp. baking powder 1 tsp. instant minced onion 1/2 tsp. salt 2 eggs, beaten Heat oil (375 F.). In medium bowl, combine all ingredients; stir until well combined. Drop batter by level tablespoonfuls into hot oil. Fry 2-3 minutes. Drain well. Yields 15 servings. My father who was born in Wingate, Md. as was his father, was raised on Oyster Fritters and Corn Fritters. Wingate is on the Eastern Shore of Md. |
