FRIED BITTERMELONS 
Bittermelon (goya) - one (about 1/2 lb.)
1/2 pkg. tofu
1 sm. can tuna
3 to 4 tbsp. salad oil
2 eggs
Salt to taste

1. Wash the bittermelon with a brush. Cut in half horizontally, clean the seeds out with a spoon and cut each half in 1/4 inch thick moon shapes.

2. Heat frying pan before adding salad oil. Fry the bittermelon in high heat until they feel half soft. Add tofu braking it into bite size pieces with your fingers. Let the mix fry for a few minutes and add tuna. Mix the ingredients quickly being careful not to let the mix burn. Add salt to taste.
