FRIED EGG ROLL
1 lb. ground beef
1 lb. bean cake (tofu)
1 lb. bean sprouts (may use canned bean sprouts)
1 egg
1 pkg. egg roll skins
2/3 c. oil

MIXTURE A:

2 tbsp. chopped green onion
1 tsp. sesame oil
1/2 to 1 tsp. garlic powder
1/2 tsp. salt

Cook bean sprouts in boiling water for 2 minutes. Drain and chop coarsely. Add ground beef, tofu, and 1 egg. Combine with Mixture A in a large bowl and mix well until it forms a ball.

Place 1 teaspoonful of filling in open egg roll skin. Fold into a triangular shape, pinching edges together (may use water or mixed egg to seal seams of egg roll). Cook in boiling oil (about 375 degrees F.) for approximately 1 minute until light brown. Drain excess oil on paper towel. Serve hot. May be kept warm in the oven.
