PECAN SANDIES | |
1 c. butter 1 c. cooking oil 1 c. granulated sugar 1 c. confectioners sugar 2 eggs, well beaten 4 c. flour 1 tsp. salt 1 tsp. baking soda 1 tsp. cream of tartar 1 tsp. vanilla 2 c. finely chopped pecans Sugar for top of cookies Cream butter and oil together. Blend in the two sugars, then the eggs. Sift flour, salt, baking soda and cream of tartar together. Stir into creamed mixture, add vanilla and mix well. Stir in pecans. Place small balls (about 1 teaspoon) of dough on greased cookie sheets, flattening them with the bottom of a small flat bottomed glass dipped in sugar, (wet the bottom of the glass to make sugar stick the first time). Bake at 350 degrees F. for 12 to 15 minutes. |
