EASY CHICKEN RICE DIVAN 
2 (10 oz.) pkgs. frozen broccoli spears
1/2 c. grated Parmesan cheese
2 c. cubed, cooked chicken or turkey
1 c. cooked rice
2 tbsp. butter and 2 tbsp. all-purpose flour (or use 1 can cream of chicken soup)
1 c. milk
1 tbsp. lemon juice
1 (8 oz.) carton (1 c.) dairy sour cream

Cook broccoli according to package directions; drain. Arrange broccoli in 12x7x2-inch baking dish. Sprinkle with half the Parmesan; top with chicken or turkey. Season meat with salt and pepper; spoon rice over. Melt the butter; blend in flour. Add milk all at once; cook and stir until bubbly. Cook 2 minutes more. Remove from heat. Stir in lemon juice. Fold in sour cream. Pour sauce evenly over chicken; sprinkle with remaining cheese.

Bake at 400°F for 15 to 18 minutes.

A quick and simple recipe. We like to add curry powder to the sauce, and cheddar cheese on top with some crushed Ritz crackers.
