RED BEANS AND RICE WITH SAUSAGE | |
1 c. cooked long grain rice 1/4 lb. chorizo or Italian sausage 2 tbsp. oil 1/3 c. chopped onion 1 med. tomato, peeled and chopped 1/4 c. frozen peas 2 c. cooked kidney beans, drained 2 c. chicken broth Salt Avocado slices, if desired Tomato wedges, if desired Remove casing from sausage. Heat oil in large pot or Dutch oven. Add sausage. Fry over medium heat until browned. Remove, set aside. Add rice and more oil, if necessary. Cook and stir over medium heat 3 to 5 minutes. Add onion, cook until tender. Add tomatoes, sausage, peas, broth, kidney beans. Cover and simmer until most of liquid is absorbed. Reduce heat and steam 30 to 45 minutes until rice is tender. Salt to taste. Garnish with avocado slices and tomato wedges. Serves 6. |
