TROPICAL FRUIT CAKE | |
2 1/4 c. sugar 1 1/2 c. drained crushed pineapple 3 tsp. baking powder 6 eggs 2 1/4 c. plus 3 tbsp. flour 1/2 tsp. salt 2 tsp. vanilla 1/2 lb. candied pineapple 1/2 lb. candied cherries 2 lbs. dates 1 lb. Brazil nuts 1 lb. walnuts Beat eggs; add the sugar and then add the dry ingredients and vanilla. When completely mixed, add the whole fruit and nuts. Pour into greased pans and bake 1 1/2 hours at 300 degrees. |
