TROPICAL CHEESECAKE 
4 1/2 lbs. cream cheese
3 pts. sour cream
1 gallon whole milk
1 bag vanilla pudding mix
1 qt. and 1 c. whipped topping
3 c. crushed pineapple (drain well)
2 c. mandarin oranges (drain well)
1/2 c. light toasted coconut
1/2 c. coconut for garnish

Beat cream cheese and sour cream at medium speed until smooth and fluffy. Slowly add milk to cheese mixture. Beat at low speed until smooth.

Add mix slowly. Beat 2 minutes on low and 1 minute at medium speed. Fold in whipped topping.

Fold in fruit and 1/2 cup toasted coconut. Pour into pan. Sprinkle with remaining coconut and refrigerate.
