BAKED BEANS 
1 lb. sm. white beans
1 lg. onion, diced
1 tsp. dry mustard
1 c. of either salt pork (diced), fresh pork, diced bacon (Canadian), or cooked ham
2 c. boiling water
1/2 c. molasses
1/4 c. brown sugar

Soak beans overnight. The next morning, place onion in oven cooking pot (4 qt. size or bigger). Drain beans and place in pot. Add meat on top of beans. In separate container, mix all remaining ingredients. Pour over beans in pot. Add water (hot) if necessary, to cover top of beans. Cover the pot, and place in oven at 325 degrees and cook for approximately 5 hours. Check on beans periodically, about once an hour, stir gently and add water as needed (hot). Beans are done when browned and tender. Serve with brown bread and/or ham roast. Good-luck! Enjoy!
