ONION PIE 
MIX:

1 c. finely crushed saltine crackers, about 20 - 24 crackers
1/4 c. butter, melted

Press into bottom and sides of 8 inch pie plate.

2 c. onions, thinly sliced
2 tbsp. butter
3/4 c. milk
2 eggs, slightly beaten
3/4 tsp. salt
Dash of pepper
1/4 c. shredded sharp process or Colby cheese

Cook onion in butter, stirring to separate rings, until tender but not browned; place in pie shell. Combine milk, eggs, salt and pepper; pour over onions. Sprinkle with cheese, dash of paprika.

Bake at 350 degrees for 30 minutes or until knife inserted half-way between center and edge of pie comes out clean. Garnish with additional cooked onion rings and parsley, if desired. Serve hot. Makes 4 - 6 main dish servings, or 10 - 12 appetizer servings. (It's good cold, too.)
