APPLE WALNUT CAKE 
4 cups coarsely peeled chopped apples
2 cups sugar
2 eggs, beaten
1/2 cup oil
2 tsp. vanilla
2 cups all purpose flour
2 tsp. baking soda
2 tsp. cinnamon
1 tsp. salt
1 cup chopped walnuts (or pecans can be substituted)

Preheat oven to 350°F.

Combine apples and sugar; let stand until the sugar begins to dissolve. mix together with mixer, eggs, oil, and vanilla. In large bowl, sift 2 cups all purpose flour, baking soda, cinnamon, and salt. stir dry ingredients with mixer alternately with apple-sugar mixture. Add nuts and stir. Pour into a greased and floured oblong pan.

Bake for 1 hour or until cake is done. Enjoy! This cake tastes better after it sets a day.
