SPANISH EGGPLANT 
1 med. eggplant
1/2 onion, chopped
1/2 green pepper, diced
2 tbsp. bacon drippings
1/2 can Rotel tomatoes & chilies
1 tsp. salt
1 tbsp. sugar
1/2 c. bread crumbs
1/2 c. Parmesan cheese
1/2 c. Cheddar cheese, grated

Combine eggplant, onion, pepper and bacon drippings; mix well and let set 10 minutes. Stir in tomatoes, salt and sugar. Place in casserole and microwave about 5-6 minutes until tender. Cover with bread crumbs and cheeses. Bake at 350 degrees for 20 minutes. Even those who don't like eggplant like this.

Since microwave ovens vary in power, you may need to adjust your cooking time.
