SPANISH EGGPLANT | |
1 med. eggplant 1/2 onion, chopped 1/2 green pepper, diced 2 tbsp. bacon drippings 1/2 can Rotel tomatoes & chilies 1 tsp. salt 1 tbsp. sugar 1/2 c. bread crumbs 1/2 c. Parmesan cheese 1/2 c. Cheddar cheese, grated Combine eggplant, onion, pepper and bacon drippings; mix well and let set 10 minutes. Stir in tomatoes, salt and sugar. Place in casserole and microwave about 5-6 minutes until tender. Cover with bread crumbs and cheeses. Bake at 350 degrees for 20 minutes. Even those who don't like eggplant like this. |
