CORNBREAD CASSEROLE 
3/4 to 1 lb. ground beef
Salt and pepper
1 c. yellow cornmeal
1/2 tsp. baking soda
1 c. milk
2 eggs
1/2 c. bacon grease, shortening or oil
1 (1 lb.) can cream-style corn
1 onion, chopped
Chopped jalapenos or green chiles
1/2 lb. grated cheese

Season ground beef with salt and pepper and fry until crumbly; drain and set aside. Prepare cornbread; mix cornmeal, 1 teaspoon salt, soda, milk, eggs, bacon grease and corn in large bowl. Stir until well blended.

In a large pie pan or black iron skillet, heat 2 tablespoons grease or oil. Add half the cornbread mixture; spread beef over it and add layers of onion, jalapenos and cheese. Top with remaining cornbread mixture. Bake in 350 degree oven about 40 minutes, until golden brown and set. Serve warm. Serves 6.
