SQUASH CASSEROLE 
2 lb. yellow squash (cooked & drained)
1 onion, grated
1 can cream of chicken soup
Salt & pepper to taste
1 (8 oz.) carton sour cream
1 pkg. Pepperidge Farm herb seasoned stuffing mix
1 stick butter
1 c. grated Cheddar cheese

Melt butter and toss with stuffing mix. Mix all ingredients together (save some stuffing mix for topping). Mix well and pour into greased casserole. Top with remaining stuffing mix. Bake at 350 degrees for 30-35 minutes.
