EGGPLANT ROLLETINI 
1-2 med. size eggplant(s)
Sliced Mozzarella
1/2 tsp. Ricotta
Parmesan cheese
pepper
Prepared tomato sauce

Peel and slice eggplant lengthwise. Soak slices in salted water. Drain thoroughly. Lay out eggplant and sprinkle each slice with pepper and Parmesan cheese. Top each slice with small amounts of Ricotta and place slice of Mozzarella over ricotta smoothing it down. Roll each slice and place seams downward in slightly sauce covered bakeware. Sprinkle with Parmesan cheese and tomato sauce. Cook in preheated 350 degree oven for 20 minutes. Set for 10 minutes.
