POUND CAKE 
1 lb. flour sifted once
1 1/2 tsp. salt
1/2 tsp. mace
1 lb. soft butter
1 lb. sugar
1 1/2 tsp. vanilla or brandy extract
9 or 10 eggs (or 2 c.), slightly beaten

Line bottoms and sides of 3 (8 3/4" x 4 3/4" x 2 1/2") loaf pans with smooth brown or parchment paper. Do not grease. Have all ingredients at room temperature about 75 degrees weigh or measure ingredients, but best to weigh. Start oven 10 minutes before baking; set to moderately slow (325 degrees).
