FIESTA CASSEROLE 
1 lg. onion, chopped
1 clove garlic, minced
1 lb. ground beef
1 (1 lb.) can tomatoes
1 (1 lb.) can red kidney beans
1 (15 oz.) can chili, without beans
1 (6 oz.) can ripe olives
2 tsp. salt
1/4 tsp. pepper
1 pkg. corn tortillas
4 oz. grated cheese
Optional 2 tbsp. chili powder

Brown ground beef, slightly; drain. Add onions and garlic, saute slightly. Add tomatoes, chili, kidney beans, salt and pepper (and chili powder if desired). Heat to boiling. Add olives.

Place 3 tortillas, overlapping if necessary in a 12 cup baking dish; top with about 1 cup of sauce. Repeat to make about 3 more layers of each, ending with sauce. Sprinkle with cheese and bake in a hot oven (400 degrees) 30 minutes or until bubbly hot.
