MEXICAN FIESTA PIE | |
2 lb. lean ground beef 1 or 2 white onions 1 bottle taco sauce (hot) 2 to 3 c. Monterey Jack cheese (grated) Garlic salt or powder 1 pkg. corn tortillas 1 pkg. taco sauce mix 2 pkg. frozen chopped spinach (drained) 1 sm. can green chilies Saute ground beef and onions. Add taco sauce mix. Add chilies and garlic. In the meantime, thaw spinach and squeeze out as much moisture as possible. Spread taco sauce on both sides of tortillas. (1) Place 2 or 3 tortillas (overlapping) in casserole. Layer (2) meat mixture (3) spinach (4) top with cheese. repeat layers. Bake at 350 degrees for 1 hour (1/2 hour covered, 1/2 hour uncovered). Put extra taco sauce in ring around top. If any spinach left over, place in center of ring. |
