COMBINATION VEGETABLE SALAD 
1 c. cooked diced carrots
1/2 c. cooked diced beets
1 c. cooked peas
1/2 bunch watercress
1/2 Spanish onion, chopped
1 c. cauliflower flowerets, uncooked
1 c. mayonnaise

Toss all ingredients together gently, using a wooden spoon and fork. Arrange on crisp lettuce in salad bowl or on individual plates.
