SWEET AND SOUR CHICKEN | |
4 boned skinless chicken breast halves (cut into bite size pieces) 1 med. onion, chopped 1/2 c. green pepper, chopped 8 oz. can drained pineapple chunks 1/3 c. sweet and sour sauce 1 tsp. soy sauce 1/4 c. cashews or peanuts (optional) Hot cooked rice Rinse chicken and pat dry. In a 2 quart, microwave safe casserole, combine chicken pieces, onion and green pepper. Cook, covered, on high for 6 to 8 minutes until no pink remains in chicken pieces, stirring twice. Drain off juices. Stir in pineapple chunks, sweet and sour sauce and soy sauce. Cook on high for 1 to 2 minutes until mixture is heated through. Stir in cashews or peanuts. Serve with rice. Makes 4 servings. |
