1 c. fat 2 c. sugar 4 eggs 1 1/2 c. buttermilk 3 c. self-rising flour 1 tsp. each nutmeg, cinnamon and allspice 1 c. nuts meats 2 or 3 grated apples 2 tsp. baking powder Proceed as in making regular cake then add nuts, raisins and apples. All this before putting in about 1 cup of the flour and the raisins will not sink to the bottom if you mix them with flour then add. FILLING: 1 can grated coconut 3 c. sugar 1 lemon, scraped out and rind 1 tbsp. flour 1 can pineapple, juice and all Mix everything and cook until thick enough to spread except coconut. Let the other cook a little before you add the coconut. The coconut will not turn as dark. |
