FRENCH ONION SOUP 
4 tsp. butter
2 tsp. flour
Salt & pepper to taste
1/2 oz. Parmesan cheese, grated
1 c. fresh onion
2 c. consomme
Dash of Tabasco sauce
2 slices bread croutons

Simmer the onions in butter. Blend in the flour. Add the consomme, stirring. Add the seasonings and simmer for 20 minutes. Serve over the croutons and sprinkle with cheese. 2 servings.
