CRAB AU GRATIN 
1 lb. crab meat
1/2 stick butter
2 tbsp. flour
1 c. milk
Salt, pepper
1 tbsp. minced onion
Seasoned bread crumbs
Flaked Cheddar cheese

Melt butter in saucepan. Remove from heat and add flour. Stir to a smooth paste. Add half of milk. Return to heat, stirring often. When well mixed, add remainder of milk. Stir in seasoning to taste. Cook until sauce thickens.

Add cleaned crab meat to sauce. Mix in sufficient bread crumbs, about 3/4 cup. Place in casserole, top with cheese. Place in 350 degree oven until cheese melts. Serves 4 to 6 people. Great served with fresh green salad and warm garlic bread.
