CRAB MEAT AU GRATIN 
2 c. crab meat
2 tbsp. butter
1/2 tsp. salt
1/4 tsp. pepper
2 egg yolks, well beaten
1/2 c. cream or evaporated milk
1/2 c. cheese, grated
Lemon wedges

Melt butter; add crab meat, salt, pepper and cook slowly 5 minutes without browning. Mix cream or milk with beaten egg; add to hot crab meat and cook 4 minutes over low heat, stirring constantly. Pour into individual ramekins or large casserole. Top with grated cheese. Bake at 350 degrees until cheese is melted. Serve with lemon wedges.

Serves 4 to 6.
